CUT FISH AND FILLETS MUST HAVE CLEAN, PRECISE KNIFE LINES WITH NO TEARING. COLOR MUST BE EVEN THROUGHOUT WITH NO GRAY OR OXIDIZED EDGES. BLOODLINES MUST BE CLEANED WITHOUT OVERWASHING. FAT LINES MUST APPEAR SHINY AND NOT DULL OR DRY.
ODOR MUST BE LIGHT AND CLEAN, SIMILAR TO SALT WATER OR MINERAL NOTES. SOUR, SWEET, RANCID, OR STRONG SMELLS ARE NOT ACCEPTABLE. ANY STRONG ODOR INDICATES AGE OR IMPROPER HANDLING.
FISH MUST BE HELD COLD JUST ABOVE FREEZING TEMPERATURE. ICE MUST SUPPORT THE FISH FROM BELOW. FISH MUST NOT BE SUBMERGED IN MELTWATER. HARD FREEZING IS NOT ACCEPTABLE FOR FRESH DESIGNATION.
PACKAGING MUST BE CLEAN AND INTACT WITH NO LEAKS OR BROKEN SEALS. LABELS MUST CLEARLY DISPLAY SPECIES NAME AND PROCESSING DATE. PRESENTATION MUST SHOW CARE AND CLEANLINESS.
PORTIONS MUST BE CONSISTENT. FILLETS MUST MATCH IN THICKNESS AND BE CLOSE IN WEIGHT. CONSISTENCY INDICATES DELIBERATE AND CAREFUL CUTTING.
SUPPLEMENTAL ITEMS SUCH AS BONES, HEADS, OR COLLARS MAY BE INCLUDED AND SHOULD BE PACKAGED SEPARATELY. THESE ITEMS ADD VALUE AND REDUCE WASTE.
ALL HANDLING MUST BE DONE WITH CLEAN HANDS AND TOOLS. FISH MUST NOT BE THROWN, SLAMMED, OR MISHANDLED. MOVEMENT MUST BE CONTROLLED AND DELIBERATE. FISH MUST BE TREATED AS FOOD, NOT AS CARGO.
